I just got a used matech sight, and the sight itself won't stay down, is there any way to remedy this?  I'm also missing the clamp piece that isn't attached, any way to find those somewhere to buy?

Part is worn out from use.  There is a small tit on the left side that friction holds the sight down and when it is worn down there is no more friction to hold.
Either get use to it being up all the time or tie it down or get another one that is new.

There’s a slight chance this will help, but you could try de-greasing the sight. I had a MATECH that when lubed with CLP, the sight aperture would pop up during firing. De-greased it and the “auto deploy” mode ceased.

As far as replacement parts go, check the Equipment Exchange. ARFCOM member Mongo makes a hardware kit.
