I have several ammo cans of loosely stored bulk ammo and was wondering if it would be best to store it with some kind of moisture capturing device.

I keep them off concret floor as well. Grab a pallet to throw them on.

I have a slightly different method. If I can't obtain ammo in a 200 round sealed pack, then I usually buy it in 200 rounds lots, and vacuum pack it into a sealed foodsaver bag.

The machine sucks all the air put of the package, and drys the contents while doing it; the package is then sealed with a heat weld. It's water proof, and if you arrange the boxes correctly, you end up with packages that fit nicely into a .50 ammo can (it can easily hold 800 packaged rounds of 5.56, maybe more).

I package more ammo with my food saver than I do food.

And it works on anything you might want to seal until you can justify its use by needing a sharp knife to open the package.
