I think I need a Maxim Defense stock for my PWS 7.5in EL Diablo and was wondering what is the right buffer weight for that size setup? I figure someone has already done it.

Chose a standard buffer weight for one.
PWS recommends a standard buffer, i.e. carbine weight, for the piston uppers.
Runs great

i have a standard on a 7.5 Aero Build and its been good to go
