Is it legal to have whatever we want engraved on our blank lowers, such as a Colt/Armalite roll mark copy?

I belive so, as long as you keep the original manufacturers markings it is kosher, check out orion arms for engraving.

I'm pretty sure so long as the weapon's serial and manufacturer name remain you're good to go.  However, reproducing other companies logos might get one into issues of copyright and/or trademark infringement, which might be a problem for you and/or the person or company responsible for the engraving.

If you do the work yourself its legal.

If you pay someone to do the work, they will have issues with whoever owns the image.
