How long is that hand guard? I'm looking to do a similar 7.5" build with a KAK can at the end but think I want the barrel to barely extend outside the handguard, not necessarily stick out alot. I assume a 10" would work for me but am not sure...

I'd do a 9" if that's what you want.

A 7" rail will meet at the muzzle threads of a 7.5" barrel . Factor in a 2" muzzle device.

I think 10" would be flush or past the muzzle device.

Nice gun!  Thanks for sharing.  Did you weigh it?
That "more vertical" pistol grip really makes shooting the AR pistol more natural letting you tuck your right elbow to your side.
