So I'm building my pistol and I'm trying to clear the <26 inches overall length mark. I'm using a 10.5 inch YHM barrel and I'm about an inch too short. If I used an A2 style buffer tube and drilled out the threads where the stock mounts would that be legal?

Yes legal, but there really isn't a need to drill out the threads...at all.

Or you could just buy the KAK tube and call it a day

Yep. With rifle tube you're gonna have to deal with takedown pin detente/spring in one way or the other.
