A little history. This will be my first AR. I want to buy a complete upper. I am looking to biuild for accuracy.  I Will be hunting hogs out to a range of 500+ yds. They are a huge problem on the ranch. A friend that I hunt with doesn' t believe that an AR can shoot out to these ranges accurately. I wouldn't be a good friend if I wasn't willing to prove him wrong, Right?  I do hand load but I definately want the option to be able to buy ammo off the shelf. I was currently looking pretty hard at the  .260 and .308. Leaning towards the .308 mainly for availability reasons.
The places below all seem like good chioces to purchase the upper from.

Any other reputable gunsmiths I should consider?
Any other calibers that would work better for my application?

I highly recommend the .260.  I have taken white tail deer out to 500yards with it, and practice to 700yards.
if you want a little more punch, you could get one in 300 SAUM, or WSM. both can be had as factory rifles if you decide not to build.

as far as building for accuracy, the receiver make doesn't have any effect on accuracy(unless its not square).
buy a high end barrel from someplace like Kreiger, send them the bolt to have it mated. then get a good trigger.
everything else it pretty much just looks or preference.

my .260 has a custom bull bbl from Kreiger, and i couldnt be happier with it! handloaded bergers give me sub 1/4moa 5 shot groups.
