I am wanting to purchase a 6.8 upper and not sure of what would be the best barrel length for this round. I plan to shoot out to 600-800 yards.

6.5 Grendel would be better suited for those ranges. 6.8 is a great short to intermediate round. 6.5 is better for longer distances.

Just curious OP, do you have experience shooting at 600-800 yards or will this be something you are taking up?

I'd go 18" or even 20" for 600-800 yards.

You'll only get another 50-100 fps going from 16 to 18, and another 50 fps or so going from 18 to 20.

The direct answer to your question would be "as long as you can get."  

The more helpful answer would be that the 6.8 isn't really designed for those ranges -- it was intended as a point blank-600m combat and hunting round optimized for use out of 14.5"-16" carbine barrels.  My 16" with 115 grain soft points goes subsonic just after 600 yards.  You could get it to go a little farther with a longer barrel, lower drag bullet, and a hot load, but you would be fighting an uphill battle getting that cartridge to stay supersonic to 800 yards.  I suggest a different cartridge if you really want to shoot that far.  If you want to keep it in an AR-15 receiver, 6.5 Grendel would probably be your best bet.
