I am building a midlength rifle. how long of a handgaurd to end just at the end of the gas block ( want to cover the block, but not go too far past it that i cant adjust the gas

Depending on the gas block, you'll need a 10" or 11" handguard for a middy.

On a middy, assuming a short low pro gas block, with a 10" rail the block will stick out just a hair - its about a quarter of an inch or so that actually sticks out.  The tube will be covered.  With an 11" rail, the entire gas block will be covered, with a half inch or so to spare - like this:
