basics:
the armory ->safe forum willl tell you this: get one bigger than you need (you'll find stuff you'l want to lock up), and bolt it to the floor (for security and weight.  a safe not bolted down can just be rolled out of the house or may become less stable when you open the door).  No safe is theft proof and 100% secure, just higher quality ones are more difficult to break into or they'll last longer in a fire.  pretty much everything else will be opinion and preference and depend on your budget/needs.

my opinions mixed with a few facts:
mine lacks rifle space...pistol grips gobble up all sorts of packing efficiency, i thought my safe was too big when i bought it, but filled it up pretty quick...  i prefer external hinges, so you can swing the door all the way open without damaging the safe; external hinges are not less secure than internal hinges, because my door has bolts on all four sides.  if someone managed to break the hinges, the  inernal locking bolts will keep the door secure..which leads me to the next point; a safe's door should have bolts on all four sides.  if it just locks up on one side like a house deadbolt, the design is less secure.  i also dont like electronic locks.  decent electronic locks will have a portion where you can touch a 9v battery to to power up the lock if the battery dies.  some REALLY shitty electronic locks don't even have a spot to touch a 9v battery to for emergency power (if your lock loses power with these shitty ones, you're fucked as far as i know).  i imagine there's a small button battery in the lock that keeps the code locked into memory...if there is such a thing, and the small internal battery dies along with the main one, i don't know what'll happen...

ETA: rckclimber's sticky FAQ is a very good read.

If you need space for 12 guns get AT LEAST a 24 gun safe.

+1

Or a 36 gun safe!

Be sure to get one with extgernal hinges as the door will open ALL the way & not part-way as with internal hinges. Go with a Sargent & Greenleaf lock, all others are cheap. Pay CLOSE attention to the fire ratings. Some have higher temps but shorter duration, some have lower temp & longer duration. In arfcom fashion, you want both high temp & long duration.

Skip the fancy shiny painted finish in order to save $$$$, IMO. This means Ft. Knox safes are overpriced.
