Heart Attack Breakfast Burrito...

After a rough night out for a friends bday, I knew exactly what would be the cure all for all that hurt. Bacon. I fried up 1lb of hormel black label bacon in a large cast iron skillet. 1 tortilla was cut up and fried into tortilla chips in the bacon grease. Feeling quite hungry I also fried a small Cloverdale(local) sausage patty in said grease. Although a breakfast burrito would be able to stand alone, filled only with bacon, I needed more. I partially drained liquid bacon goodness from the pan and added 3 beaten eggs with a small amount of pepper. When the eggs were done, it was slapped together on a plate with 3 strips of bacon and melted cheese. Ridiculously strong black coffee, a bottle of Cholula, 2 ibuprofen, and a extra plate of bacon(just in case) and I was off. Temp outside was a balmy 20*f. Springfield XD9sc with 1 reload, and a well used (circa 1960) butcher knife help round out the setting and life is good.

I love breaksfast burritos. Next time, roll the burrito up with all the goodies, then put it on a hot skillet for about a minute per side. Crispy browned crusty goodness.



Here's my meager breakfast today:



Bacon

Eggs fried in bacon grease with cheddar on top

Grits with home-made pepper jelly

Java



Arteries.....slowly........closing...........aaarggggh......

Makes me look forward to dinner tonight even more, I went out and bought ingredients for breakfast burritos from hell this morning:


2 tubes of chorizo
1 big potato
eggs
jumbo flour tortillas
cheeze
salsa
tapatio hot sauce


shred and fry potatoes, fry up and crumble chorizo, crack six eggs into the mix. stuff mixture into burritos with salsa, hot sauce, and shredded chedder. mmm
