I like scallops at fancy restaurants. I'm working nights in December,and I'm off tonight. I got the brilliant idea to try my hand at cooking scallops for the first time in my life at 0230. It did NOT go well.

They had the appearance of normal scallops, but were otherwise disgusting. Too chewy, too fishy, and too much garlic. Kitchen now smells like shit to boot.

Get to practicing. I'm thinking you didn't undercook them so as to avoid overcooking them and making them chewy and nasty.

Try pouring in some white wine after frying to scrape up all the brown bits. Then add some cream and dried terragon and thicken.

This.  They should never taste fishy.  As far as chewy, you overcooked them and i think you can figure out the garlic part.

Dust them in flour, paprika and parsley flakes.

GENTLY saute in melted butter for just a minute or two on each side.  DO NOT OVERCOOK OR USE HIGH HEAT.

Remove.  Add more parsley and lemon juice to the pan, scrape up the bits, pour over scallops.
