I've been to a local Vietnamese place a few times...good pho and you get a lot of food for the money. I like to put Sriracha in it. In fact, that's where I was first introduced to the cock sauce.

I've got Vietnamese friends that I have known for 5 years and lived with them during my divorce for a few months. Perhaps it's pronounced different if one was from the north or south.
I believe Pho is originally from the north, so, possibly the phonetics are different enough in the south, as you mentioned.
Perhaps reunification didn't wipe all slates clean?
