I'm thinking of re-packing some ammo (mostly 12ga ammo) from a wooden crate into a large sealable sheet metal can. Any suggestions for materials to use in packing (wax paper foil etc?)

If it were me, I'd put som sort of grating on the bottom of the can, put the ammo with some to keep it packed tightly, toss in a couple of dessicent packs and seal her up.

I don't know if this is the best way,  but I put a dehumidifier in the room and get it down to 45% humidity with the ammo all spralwed out so it's adapted and dry. Then I use ziploc bags. I still keep the area in which it's stored at about 50% or less.

I have a dehumidified room, GI ammo cans with good seals, and Sorbent Systems blue to pink dessicant blocks that are rechargeable in 20 seconds in the microwave. Two blocks in every can. Never had a problem doing it this way.
