If I pop the cork on a bottle and have a glass, can I put the cork back in and expect the wine to stay good for a while?  Or do I have to drink it within a certain period of time?

If it's a non-fortified wine then it will have a shelf life of a few days...reds generally have a lower acidity level level and will go "bad" sooner than a white opened at the same time. You can inject some nitrogen or CO2 on top of the wine and it will last a lot longer. O2 is what will make it go by.

it will keep for a day, after that the oxidation is too extreme and the bouquet will disappear and the flavor will bloat.  After 2 days, then the wine will just taste acidic and bad.

You can use a suction pump to add a day or spray the void with lab grade argon to add a couple days.

That depends on the type of wine and the storage conditions.  If the wine has any kind of carbonation, like champagne, then its flat and nasty after a few hours.  

Red wine, once opened, is good for a day or two with the cork on and in the fridge.  Let it warm up to room temp before imbibing...not great, but it will pass, esp. if it was an expensive bottle.

White wine will keep the longest, again assuming you re cork and put in fridge.  You should get about 4 days out of it.

There are some products out there that create a vacuum when you recork.  I havn't tried these, but they claim to greatly extend the life of an opened bottle.

Heh.  I'm not a heavy drinker but have been having a glass of red wine a night for antioxidants and just because it tastes damn good.  That one glass gets me a little light headed.  Don't think I could do a bottle at a time :)
