Decided to make a batch of NE style Clam Chowder.   Also a couple of Sea Trout fillets that the boy caught the other day.



dice the celery and onions, and half the pack of bacon



cook until it looks like this, Then, add a little flour to the fat, and whisk it until it gets thick.



then add the diced potatoes and clam juice... the juice from the cans of clams as well, and bring to a boil.

let the potatoes boil for a few minutes, then add cream... I used half and half, just because I didn't want it too rich.

Taste and add salt... I needed to add a bunch

after the potatoes are this tender...

Take the fish and clams for a swim for 10-12 minutes...

a dash of Parsley for garnish, and its a dinner pic.

is the bacon for the fillets or the chowder? I always buy the canned chowder stuff, bet it tastes like crap compared to home made

Looks good.   I've been making chowder here also...I have some smoked salmon that my family seems to like in Chowder...

Celery (diced up carrots occasionally), sauteed until clear, then add a bit more oil (or butter) and flour to make a blond roux.   Add Chicken stock, 1/2 and 1/2 or cream/milk/evaporated milk.  Add the smoked salmon (broken into small pieces), some salt (if needed) pepper, and occasionally some dehydrated vegetables (more for the specks of parsley in the blend that I get).   Diced fine potatoes, then slow simmer until the potatoes are tender....the kids and my wife seems to love it.

I edited my post to reflect the half and half that I used... it was still in the chill chest.

Of course I made a roux... I neglected to mention it.

Bump for the hungry.

In case you all wonder why I bother doing this, I do it as a 'community service'.

I figure that there are a bunch of young bachelors here who are intimidated by a stove and a hot frying pan.

If I can make something tasty out of stuff from the store, than you can too.

It impresses the ladies as well.

Clam chowder, yet another thing that I've learned bacon can make more awesome.
