How in the world are you going to dress a buck with that thing?

I carry a ScrapYard Dumpster Mutt whenever I go into the woods. Backed up with a Spyderco Lava and a Leatherman Core.

Christ.. why bring a firearm if you've got that in your hand..

I have a couple Helle knives, they are extremely sharp and the finish is excellent on all of them..

As far as real hunting knives that never cut anything but critters these are my all time favorites.

The Schrade Gunstock Trapper. This knife has a blade right at 3". It locks open and is a perfect shape for fish you don't filet, small game, and is good for deer too. It is a little delicate, but works great.

The Schrade Sharpfinger. This knife has a 3 1/2" blade. I have used a lot of knives on deer and keep coming back to this one. There is something about it's size and shape. It really is like using your finger. It is good for small game too.

This knife was made by a friend of mine. It has a 3 3/4" inch blade and a large handle. I like a knife with a handle you can get a hold of. It is a great deer knife and will last for three deer no problem.

The Schrades aren't fancy or expensive but they do a great job. I usually carry a bigger "expendable" knife like a Green River hunter or Gerber Gator for cutting stuff that isn't an animal. A good hunting knife that is often overlooked is a plain old Old Hickory 6" butcher knife.
