I have 10lbs of potatoes in my pantry that are starting to grow sprouts on them. I don't want them to go bad so I need some good recipes that use a shitload of taters. I have a crockpot scalloped potatoes recipe that I will be using, but that will only use a couple of pounds.

Any ideas?

When grilling I like to slice the taters thin without pealing them, slice up an onion, add mushrooms, some shredded chedder cheese and some butter in a foil pack and through them into the grill for about a half hour or so.

Scalloped potatoes are always good. I throw potatoes in pretty much every side dish I can - it's a cheap and good filler.

Too bad they werent red or new potatoes......

Best home fries in the world, slice taters into thick slices and boil a short time...not quite till soft and skins falling off but close. Drain off and toss in a hot skillet already sizzlin with 1/2 and 1/2 olive oil and reg oil, two -three tsps of garlic and plenty of real butter (hear them arteries pumpin?)
Stir fry till browned  and devour

Make a nice dry rubbed pork roast smothered in carrots, onions, and potatoes. Cook covered in foil for a few hours then pop the foil off and cook til the meat hit 185F. Remove the all the goodies and make gravy from the cracklins.

I used to make mashed potatoes and brown a pound of hamburger.  Take the mp's and hb and mix it together, salt and pepper to taste, put it in a glass baking dish and cover with cheddar cheese.

Place in preheated oven at 375 for 15-20 minutes and it's a great filler-up meal that my boys gobbled up.

Man Quiche (adapted from Ham and Cheese Quiche by Sanda Lee, Food Network)

2 potatoes, cubed (1/2 inch)
1 clove garlic, diced fine
1 tablespoon dried rosemary
ΒΌ cup onions, diced fine
1 cup cubed ham (1/2 inch) or fried bacon, diced
1 (8 or 9 inch) pre-made pie shell in foil pan, thawed
1 cup shredded Colby or cheddar and Monterey jack cheese blend
3 eggs
1 cup milk
1 teaspoon all purpose seasoning (McCormick) or Emeril Original Essence
1/2 teaspoon Tabasco sauce

Preheat oven to 400 degrees F.

Place potatoes, garlic, onions, and rosemary in microwavable dish, stir. Cover with a damp paper towel and microwave for 2 minutes, stir. Microwave, again for 1 minute.

Cover the bottom of the premade pie shell with the ham/bacon, then the cheese, then the potatoes, etc. Place on a cookie sheet and set aside.

In a medium bowl, whisk together the eggs, milk, seasonings and Tabasco and pour into the pie shell.

Place cookie sheet with quiche into a preheated oven for 35-50 minutes or until eggs have started to set and the top is browned.

Take out of the oven and let it cool for at least an hour, cut and serve.

Same here.  Mom's were absolutely delicious.  Milk/Cream, potatoes, scallions, butter, chopped cooked ham and cheddar cheese.  Baked it until bubbly hot and it rocked.

It's sooo good it's unreal.
