Easy to make, good for you, and very tasty!

Start off with one can of chickpeas.  Drain and rinse.



Cover with water in a saucepan, add a couple of cloves of garlic, simmer for 15 minutes.



While the beans are simmering, juice two lemons.



Add about 1.5 cups of creamy peanut butter (or tahini if you can find it) to a food processor, followed by 1/2 tsp. of



and two tbsp of



and 3 tbsp of



I also like to add a tbsp of sesame seeds for flavor (only if I don't have tahini). Also one tbsp of salt and a grind or two of black pepper.



Drain the beans and add them to the processor.  



Process on low until it forms a smooth paste.  Add warm water until it becomes smooth.



Taste for seasoning, add salt if needed.



Serve with toasted pita bread or make your own pita chips by cutting up pita bread, brushing with olive oil, and baking on a half sheet pan until crispy.

Damn good timing.  I love chickpeas, my family hates them and I bought 10 cans half price last night.

They like hummus, never occured to me to wip up a batch!

Indeed.

Burley, nice recipe and great pictures, but I hope you tell people there's peanut butter in it before they dig in.

As quite a few people are allergic to peanuts (including me), it would suck for them to have a reaction to it.

As an aside, I remember reading a few years ago about a college student who died of anaphylatic shock after eating chili (!!!) thickened with peanut butter.

This was somewhere up in New England, they don't know how to make chili worth shit anyway

Simmering them for 10 minutes or so helps take away some of the gassy after-effects.

mmm.

Here is an open-ended Hummus recipe I got from Mrs. Gloftoe a few years ago.


From MrsGloftoe

2 cloves garlic, peeled
juice from 1/2 lemon
1 tablespoon olive oil
1 tablespoon tahini (sesame butter)
1 can garbanzo beans (chickpeas)
Salt to taste

Add garlic, lemon juice, olive oil, and tahini to food processor and process until smooth. Drain garbanzo beans and reserve the liquid. Add garbanzo beans to food processor and slowly add the liquid until the hummus is the desired consistency.

You can also add chili powder and jalapenos, or roasted red peppers, or whatever your heart desires. You can serve with tortilla chips, pita bread, raw vegetables, use it on sandwiches instead of mayonnaise, and so on. It's a truly versatile dish!
