I was thinking avout giving it a try this weekend, but now I'm not so sure...


1 lb large white beans, soaked overnight in water, drained
6 cups chicken broth
2 cloves garlic, minced
2 medium onions, chopped (divided)
1 Tbsp olive oil
2 4-ounce cans chopped green chilies
2 tsp ground cumin
1 1/2 tsp dried oregano
1/4 tsp ground cloves
1/4 tsp cayenne pepper
4 cups diced cooked chicken
3 cups grated Monterey Jack cheese
1 jalapeno or serrano pepper, chopped (optional)


Sounds like Chicken Bean Soup to me.

I have. I used the canned chicken breast instead.

If the basis for the sauce is something other than chili peppers, it's not chili.

The recipe sounds like something my ex used to make.  It was pretty good.

My step mom makes a white turkey chili and it fucking rocks.
Don't know her recipe, but I'd say give it a try.

Yep, my wife makes it every 6 months or so.

6 cups of broth though? That's an awful lot of broth!


The broth will be thick due to all the melted cheese.

I have made similar, both with and without beans. It's great - very delicious, low in fat, high in protein. Make sure you use lots of white pepper, not black pepper. It makes a difference, to me.

If you want to expand your uses for this dish, prepare the chili, but don't cook it all the way. When the chicken is about half-cooked through, dump the stuff in a baking dish and cover with quarters of biscuits from the little refrigerated tubes. Don't use the "Grands" biscuits - they're too big. I use the cheap store-brand biscuits that are always on sale. Anyway, bake the mess in the oven for the time & temperature as recommended on the biscuit tube. Chicken pot pie.

I've also made white chili with pork and turkey. A friend of mine has contemplated tuna chili. We're still wrestling with that one.

Yoy can always thicken it up with a slurry. Mix cornstarch and cold water together and add it towards the end. When it comes back to a boil it will be done. For that size recipe I would use two tablespoons of cornstarch and half a cup of water.
