I was thinking avout giving it a try this weekend, but now I'm not so sure...

I have made similar, both with and without beans. It's great - very delicious, low in fat, high in protein. Make sure you use lots of white pepper, not black pepper. It makes a difference, to me. If you want to expand your uses for this dish, prepare the chili, but don't cook it all the way. When the chicken is about half-cooked through, dump the stuff in a baking dish and cover with quarters of biscuits from the little refrigerated tubes. Don't use the "Grands" biscuits - they're too big. I use the cheap store-brand biscuits that are always on sale. Anyway, bake the mess in the oven for the time & temperature as recommended on the biscuit tube. Chicken pot pie. I've also made white chili with pork and turkey. A friend of mine has contemplated tuna chili. We're still wrestling with that one. |
