What is the best option for student loans without going through the university?

The standard process is to submit a FASFA to your school, and wait to see what they give you.

I want to do something more like a standard loan, but with deferred payments.  I don't like the idea of the school controlling MY money.

I believe Chase and/or CitiBank offer student loans.  Either check online or drop by the college's financial aid office to see if they have any info.

That's the thing... the college wants me to go through them to get the loans.  I don't want to do that.

They're going to give me info on what THEY want me to do.

I'd suggest the FAFSA route, depending on where your going to school they're very generous with money. I just got $25,000 in scholarships/grants for one year!

Usually the school knows the best route, its also to avoid students taking out more than they need and then defaulting on the loans.

Sallie Mae Loans....No FAFSA

Education Finance Partners

Astrive Student Loans

The last one, I believe I've seen commercials for on TV.

ETA:  Probably going to need good credit and/or cosigners on these

There are plenty of private student loan places out there...just do a google search.  Also, be aware that deferring payments with them is a bit more difficult and that it is nearly impossible to consolidate private student loans later and not get screwed.  Ask me how I know.
