What is the difference between a Beurre Blanc and a Bechamel Sauce? Is a beurre blanc the same as a bechamel, just made with butter instead of another fat?

beurre blanc does not involve flour. Bechamel is made from a roux (flour / butter) and dairy (milk or cream) Beurre blanc is butter, challots, and white wine.

Thank you... I only took 1 year Culinary School at a Junior College and we didn't get into sauces. I have made MANY sauces using roux's, but have never made a beurre blanc. I was reading up on the 5 "mother" sauces earlier and I didn't see a beurre blanc mentioned and got curious..

Isn't this great? We can talk about guns and sauces here..Only in America!

the amount of unique factual information i get from this site far exceeds any other. little snippets here and there contributed by experts in jsut about any field imaginable. and much of it comes in quite handy later. gd can be a train wreck at times, but it always has a few gold bars lying around afterward.
