What is involved in changing the rear differential fluid in my 2001 2WD  Dodge Dakota ? Is it just a matter of pulling a  plug and letting it drain ?

Actually you need to pump it out. The plug on the side is at the high level for the fluid, so nothing will come out when you pull it.
A mighty vac works well, and it has other uses like bleeding brakes.

Pull the cover off to let it drain completely, this also helps if there are any shavings left in there for some reason.
Scrape both surfaces well to remove all the old gasket matertial.
Then get a tube of ur favorite liquid gasket material, apply as needed.
Reinstall the cover & add fluid.

+1. The world is full of half assers, don't go there.  It will take about the same time as trying to pump it out and it will be done right.

And since getting a funnel and quart up to refill is rarely easy, get a suction gun with the tube on the end. Stick tube in quart, pull back plunger, stick tube in diff hole, push fluid in.

You only have to do this every 100,000 miles or so - do it right.

Remove diff cover, scrape gasket, clean interals.  Probably will be a magnet in ther eyou need to clean metal shavings off of.

What about a front diff without a cover (like a GM)?  Vaccuming seems to be the only option.

Front diffs on GM's have a drain plug.

Chances are you had water in the fluid.

Sulfur.  Sulfur is added chemically to reduce wear.
