Planted hot banana peppers in the spring and got a gallon jars worth that were ripe today. I like them in a basic pickle brine. Vinegar and water in equal parts tablespoon or two of pickling spices same with salt and sugar. A whole head of garlic peeled. Heat it to a boil then reduced to a simmer for 20 minutes. Pour over the peppers that are whole and just have the caps removed. I leave the seeds. Then I add a quartered large onion. Pickled onion is really good too.
Now I gotta wait. It's a refrigerator pickle recipe so it's not canned. Along the way I'll keep adding fresh peppers. And then after the pickling brine gets some heat I'll start adding eggs. In a few weeks I'll be all set! |
