The only reason to add sour cream is if it's too hot for your delicate taste buds. Personally, I'm fine with people adding cheese, though Cheddar and American aren't particularly good choices.

Crackers are for Yankees, chili should be eaten with a corn based side (ie corn bread, tortillas, corn chips).

I've added sour cream to tame the heat

I've had cheese on inferior recipes, anything I consider "real" chili would never have cheese. I'd be ok with saltines with it if you're in to that. I'll have corn bread with mine, thanks.

I'll hit up a messican store after work to get some chilis and shit

Do you like Bleu, Brie, Camembert, Roquefort, Gorgonzola, or Stilton cheese?
Do you enjoy the benefit of penicillin?
Do you like soy sauce?
Do you like various sausages?
Do you like sauerkraut?

All these things use...bacteria/mold spores/etc in some form or another.

You may add shredded cheese to the top of your chili bowl. Sour cream is less acceptable, but to each their own.
