I bought a 32 oz bottle last year after reading a thread in GD.

After all this time, I finally used it last week on some chicken thighs. And then I became addicted.

My bottle is empty. Going to have to buy the gallon size now.

Cider vinegar base, lots of spices mixed in. It is really good and great on chicken cooked over charcoal

You can order it on amazon, I think it is only carried in the Western New York region. Do yourself a favor and try it and also get a container of Webers horseradish mustard too. Two great Buffalo items.

Haha... As soon as I saw your thread title I just knew I was involved someway, somehow.

I am glad you enjoyed the stuff, it's hands down the best marinate I have ever had and I have had hundreds.

Just had some juicy thighs over the weekend.

Tips on how long to marinade for chicken breasts? Seems like this one could be a little too aggressive for overnight. Thoughts?

This one is supposed to be pretty damn close.

Ingredients
2 quarts Cider Vinegar
1/2 cup Salt
1/4 cup Pepper
1 head of Garlic - peeled
2 tablespoons Ground Ginger
2 tablespoons Ground Mustard Powder
1 teaspoon Ground Cloves
2 tablespoons Cornstarch
1/4 cup rubbed sage
2 tablespoon dried thyme
2 tablespoon dried marjoram
1 teaspoon ground cloves


directions
Place garlic cloves, all the dry ingredients and 2 cups of vinegar in a blender and blend on high for a minute or so. Pour the mixture into a saucepan and heat over med-low, stirring, until it starts to boil and the cornstarch thickens up the mixture. Remove from heat and mix with remaining 6 cups of vinegar and allow it to cool. Store in the used vinegar bottle until ready to use.

No more than 2hrs. The vinegar can become overpowering.

I do thighs for 1-1.5hrs max. They turn out perfect.

Not the Chiavetta family per se, he's technically my wife's step dad. I have like 4 or 5 half gallons of maranade in my basement right now if you are in the CBUS area. I can't possibly use all that.
