I tried a meatloaf experiment that failed miserably a few weeks ago (Italian Meatloaf Parmesan) where I used spaghetti sauce instead of ketchup/mustard glaze and then covered it with parmesan cheese. It tasted good, but it came out of the oven looking like it had been regurgitated.
But, what if I tried Bacon Cheeseburger Meatloaf? Shredded cheddar cheese added to the meat, breadcrumbs, eggs and seasoning, all mixed together, and then strips of bacon on top of the ketchup/mustard glaze and into the oven. I am just wondering if the melting cheese will make the whole thing fall apart. |

OP, posts like yours are why every man should know how to cook.
Take a recipe, think of things to make it better, cook awesome food. Maybe succeed, maybe fail, adjust and cook again. Fan-fucking-tastic idea. I thought about doing meatloaf tonight, but decided on pot roast. I think I'll experiment with your idea tomorrow. |

I've made Bacon Cheddar meatloaf many times, it is awesome.
My wife makes the Italian meatloaf like you did as well and it does come out very soft unless you cook the meatloaf first then cover it with sauce and finish it. She spreads the meat out flat on a silicone mat then covers it with Italian ham and provalone then rolls it up. It's kind of like a meatloaf roulade. Very tastey. |

We cut a recipe for bacon cheese burger meatloaf out of the paper a long time ago. Even my mother will eat it. off the top of my head , it goes like this.
1 pound ground chuck 10 slices of Bacon cooked crumbled 8 ounces of shredded cheddar cheese 1/4 tsp salt 1/4 tsp pepper 1 Tbs Worcestershire 2 eggs 2 tbs mustard 1/3 cup ketchup 1/4 cup mayonnaise 1/4 cup bread crumbs Some Frenches French Fried Onions The ketchup and mustard get combined, save 1/3 of the mix for the topping. Combine everything in a big bowl, put it in a loaf pan, cover with topping mix. Preheat oven to 350 and bake for 40 min. Take out and top with the fired onions. Put back for 10 - 15 min. |

I use a loaf pan and lay the bacon in it and then add the meat and put the ends on top of the loaf.
And then coat it with bbq sauce I mix chunks of good cheddar cheese and onion, diced jalapeños and mix some yellow mustard,and coke in the loaf Comes out awesome and taste great |
