Who has done it without using a smoker and what are your recipes?


I've been binging youtube videos all morning... I'm desperate.

Look at the way they do the oven in the recipie down below.

That is what I did for my duck jerky from Northern Shovlers I did.

If you do use duck though, for the love of God get the pellets out because biting down on steel shot hurts.

Smoke it or use a box fan and furnace filter (Alton Brown method). Some people have had success using their oven.

You can use a smoker or your oven on a very low setting.

I routinely make it in both.

As for a marinade the possibilities are endless.  I usually use a combination of teriyaki, soy, and a basic BBQ rub.

I will smoke it for about 8-10 hours at around 190 degrees.

If you have a gas oven with a pilot light, I'd use that as a dehydrator.  Won't cost you anything extra.

If you are attempting to use smoke for that entire time your smoke isn't working. In my experience even 90 minutes is far too long, and jerky gets smoked for around 45 minutes before finishing the process without any additional smoke.

My oven has a dehydrate function. Runs fan at about 150F. Works great.  Marinade a few pounds of London broil overnight, toss on wire racks and let it sit for an afternoon. As a bonus, makes your house smell like meat

Oven on lowest setting, line bottom rack with foil (drip tray), hang your marinated meat from the top rack with toothpicks, keep door cracked and 8-10hrs you have jerky!

Grandma and mom used to make it in the oven.

Alton Brown made a dehydrator with a box fan and some furnace filters.

Put it between two screens and lay it out in the sun on a dry, warm day.

Hang over a smoky fire high enough to not be hot. Larvae is added protein.


Low oven method uses lots of electricity. If you're planning on doing more than a few batches, it'll pay for a dehydrator.

ETA Just saw OP was in AZ. This is a no brainer. Use first method.
