I've been craving fish lately and have very little wild fish in the freezer.
I've gotten cod, pollock, catfish, and tilapia. I tried the cod and it smelled and tasted fishy as fuck, the pollock smells really fishy so I won't even try cooking it. the catfish is actually fine. a slight muddy but no fishy taste. what's the deal with this? milk doesn't do a thing for it. it's really strong. I've had cod plenty of times from restaurants or gordon's frozen breaded fillets and never had this issue. I have yet to try the tilapia, but this will be my first time even trying tilapia. is this an issue with certain species? or is this fish just bad? are some species less likely to be fishy like this? these are raw frozen individually vacuum sealed fillets in a bag. I can't wait to take the boat out this summer and catch some actual fresh fish. buying and eating fish I didn't catch just feels wrong and dirty. |

I have always wondered why people object to fish tasting like fish. I remember bringing smoked red salmon to a potluck in new Mexico and they didn't want to eat it because "it smelled like fish". It is fish. What's it supposed to smell like?
Anyway, skip the tilapia. They are garbage. They feed on shit. Any cod or pollock you buy won't be farmed or fed excrement. |
It is common knowledge and a proven fact that 75% of the tilapia consumed in this country is from CHINA!!! On top of the fact that tilapia has absolutely ZERO of the Omega 3 good stuff that is supposed to make fish so healthy, the shit is farm raised.....do some research and see just how seriously bad that is for you! People, no kidding, stop eating that nasty shit!!!

what's the deal with this? milk doesn't do a thing for it. it's really strong. How long has the fish been in your freezer. My guess, over 6 months. That' the problem. Even frozen the fishy smell and taste grows stronger. You can throw a steak in the freezer for a year and it is fine but fish doesn't work that way, even vacuum sealed. I just pulled a package of deer burger out of the freezer, it's about 2 years old. It had a very strong gamey smell and a slight gamey taste. It wasn't that way when I froze it or ate the other packages. Same principle as the fish. Since your freezer isn't at absolute zero the product continues to age. Also depending on your freezer temp it can age much faster. I read something that for every 5 degrees above zero the product ages twice as fast. So if your freezer is 10 degrees instead of 0 the shelf life is cut by 75%. Not sure that I buy those numbers as it seems high but fish over 6 months should be tossed. |

Where do you think catfish and carp eat? Have you seen what pigs eat? Do you know what bacon tastes like? OP: Tilapia is good. One of the few fish my wife will eat because it doesn't "taste fishy". Take out of bag, frozen (don't thaw). Heat oven to whatever the box says. IIRC it's 375. Lay fillets on cookie sheet and cover with desired level of Old Bay. Cook for 11 minutes or until firm. Easy peasy and tasty. I've not had much luck with the frozen cod, perch, Pollock. Don't care for the swai. |

If it's from China, it's raised on human shit and chemicals! If it's from the USA, it's raised on by products and chemicals! I'm no health nut but that is some truly bad stuff!

Some are closing in on 2yrs in the freezer and the only thing we do is trim a bit of the freezer burn off. Wild game will get gamey if there is any fat on it. Wasting fish if you throw it out after 6 months. |

I pick up flash frozen Basa every 2 weeks from the Asian market down the road.
It's delicious and not smelly at all. Vietnamese catfish is what it really is, but no fucks given. Obligatory recipe... http://www.dinner-mom.com/lemony-baked-basa/ |

Even these don't have much taste. I prefer mullet and catfish for cheap and flavorful fish. I don't buy any fish/seafood that is farm raised. |

Wally's has decent frozen salmon fillets for a decent price. I've seen bags with both skin on and skinless. Those bags are great for a simple salmon ceasar dinner. Depending on your family size, a $10 bag can provide 2-4 dinners.
They're in a blue bag in the freezer with the shrimp. After that just grab some romaine lechunga, crutons, a lemon or two and a bottle of Newman's own creamy ceasar dressing. You're fucking set. Grab some garlic knots too if you want. I don't give a shit. Those ones in the mylar bag are great browned in the oven. Nothing extravagant, I'm talkin simple "get off work at 4:30 then gotta take the kids to Krav Maga then stop at the credit union on the way home to deposit a refunded child support payment because my first son who I've literally only seen once in my life is now nine years old's mother is in jail at the moment so Utah keeps refunding payment while the skanky bitch is in jail" kind of simple. |

Your best option for frozen fish are dolphin, tuna, and salmon. These are the best opportunity to go from fresh to frozen in the shortest time possible. Agree with this.. Although I can deal with bass that has been frozen.. But cod is terrible after it has been frozen, and cod is one of my favorite fish, I go to nj a couple times a month and will stop at a co-op for fresh cod to take home. |

| I fish a lot, probably at least half the weekends out of the year. We spend almost every weekend at our home on a lake. I used to vac seal but went back to gallon baggies with fillets submerged in water. Completely submerged, as in getting all the air out. Most of the fish are white bass, crappie, with a few blue cats mixed in and I fry almost all of them. I've found them to be very good up to a year when hot, fresh out of the grease. All the frozen fish (leftovers) seem tough and chewy after a night in the fridge. |

I soak my fish in a salt water brine a minimum 24 hours before vacuum sealing. So any fishy taste has to come from freezer age. I've even given away some 1 to 2 year old fish and had the guy tell me it had a really strong fishy taste. My freezer stays about 5 degrees. The freezer is a frost free freezer which I'm told will dry out frozen items faster. |
