Chili:

A variety of chili pods roasted and blended with various other spices
Stewed pork roast with a variety of herbs and spices

Of course this "chili" is not to be consumed by itself
It is destined to be become tamales:

The beans?

They are slow cooking with bacon and onion and a few herbs
Pico de gallo will be added when they are almost cooked
