I am thinking of trying this to clean up some cast iron pans I got as well as some old tools.
My question is, does my sacrificial annode need to be the same size as my metal being treated?

No. It will get eaten up but surface area will get the job done faster (and draw more amps)
A piece of 1/8" or so mild steel would work well. You can clean it off once it gets all full of crud and it will work better again.
