Everywhere I go, this seems to be the new thing. Sweet potato fries with everything.

I liked sweet potato fries before they were cool. It is tough to find a place that cooks them correctly. Most of the time they're cold inside. You and me both, I remember first eating them as a kid fried up in the big pot of oil my dad would put on the stove, way back in 73-74. He would usually cut up 1 sweet potato to every 2-4 regular potatoes, and they were delicious. Most of the places I have tried them overcook them to where they are too crispy instead of being soft and golden inside. |
