I like TexJoy steak seasoning the best but it's a local brand. Dillo Dust is good too. Just be sure and cover your butt in mustard.

I put rub on, then rub mustard (yes the yellow type) then put more rub on.

13 hours at 225 is fucking perfection.

I use Mr. Brown:

Turbinado sugar
black pepper
paprika
ground mustard
table salt
cayenne

1/4 cup each of the first three, 2 tablespoons salt, and 2tsp of the rest.

Scale it up (obviously) for your use, probably x4 or x8 (I store/use it out of one of those pizza cheese/red pepper shakers.)  It makes GREAT bark.

Rub the butt in bacon grease and then use Adams rub.  Smoke on Big green egg at 250 until it reaches 203 degrees.  I have 2 Boston butts going on the egg tomorrow night for a Saturday party.

If you are crock potting or smoking it. try cutting scoring cuts (1/2 in deep) 1-2 inches apart. Drizzle some Worcestershire sauce over it and liberally apply:



When done, you can use a spoon to scrape most of the rub off before you slice or pull your meat if you think it is too strongly flavored.

2 tbsp pepper
2 tbsp ground mustard
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp paprika
2 tbsp chili powder
2 tbsp cayenne red pepper

I would make 2 of the above recipe for each butt.  Coat in heavy yellow mustard, then rub

Watch the panties drop afterwards.

Injection is
Apple vinegar
Ketchup
6 tbsp the rub mix
Splash of Worcester
Apple juice
6 oz beer
Red pepper flakes
Minced onion

Simmer and stir on low until slightly thickened, keep in refrigerator as needed and only inject after cooling.

I give my Boston butts a simple olive oil rub and a little salt and a ton of pepper! Smoke until 205 *F

I try to keep my smoker around 225-250 *F

Inject it with Cherry DR. Pepper

for a rub use:

1 1/4 cup white sugar
1 1/4 cup brown sugar
1/2 cup salt
1/4 cup black pepper
1/4 cup paprikia

Optional add onion and garlic powder

Smoke at 225-250 degrees until internal temp reaches 200-205 (about 14 hrs)

That rub works great and it won't break the bank doing a bunch of butts at the same time.
