I have a question for those of you who eat these things... why? I don't see how there could possibly be enough meat on one to justify the effort.

If you have to ask....

Go find you a good buffet that does em right. You will see what the fuss is all about.

You have to eat DOZENS and DOZENS of them on newspaper.

That's the fun.

You eat a LOT of them. If it's a good boil the flavor is worth it. But I mean a LOT of them.
2/3/2016 4:37:23 AM EDT
[#4]
You can eat 3-5 pounds of them easy, you just kinda twist them apart and they're like a mini-lobster. All about the seasoning though.

ALSO: I had a crayfish in an aquarium for about a year until he died one day. He was fucking gnarly. Fed him little feeder goldfish. I was pretty bummed to come home to find him flopped over dead one day.
2/3/2016 4:37:41 AM EDT

That's why you order them by the pound and you get sausage, corn, mushrooms, potatoes etc. that are part of "the boil".

Why not?

That shit is good.
2/3/2016 4:39:38 AM EDT

Think of them as mini spicy lobsters. All about the seasoning, temperature and juices.
With enough practice, peeling them becomes easy and quick.
I can probably eat about 10 lbs

It's crawfish not "crayfish"

Okay, so do you discard the shell and eat them like a lobster?

Yeah.  Pinch and pull the tail out.  Peel the tail and eat it.  There's meat in the claws too, if their big enough to bother with.  Don't forget to suck the juice out of the head!

Pinch the tail, suck the head.

You twist the tail off and pinch that little bite of sweet meat out of the shell. Then suck the good stuff out of the head.

The shells are discarded to the cats and dogs.

Not really. Lobster is a cold water creature, crawdads are warm, fresh water. They don't have the sweetness of lobster. Pretty bland if not boiled with good seasoning. They need to be flushed / cleaned with fresh water most times as well to get rid of any "muddy" taste.

It takes hundreds, sometimes thousands of crawdads to have a proper boil. The seasoning is key.

As mentioned above, it takes several pounds of mudbug per person. There is truly about one bite of meat per crawdad.

There must be copious beer and a huge mess made.

It's awesome fun!

The terminology depends on the region...

No. It's crawfish, mud bugs, or crawdaddies -- crayfish is Yankee shit.

Its not just the awesome flavors from the boil and the cold beers, its a communal thing. But the boil has to be right! If you don't know then you have to experience it to know. Lucky this year the season started early -- already consumed 30 or so pounds in the week or so.

Not my picture but this is basically how it's done.

And this is how you enjoy it.

When you suck the insides out of the head, you can use them as finger puppets.
I mostly don't eat anything that still has eyes though.

[edit:] We called them crawdads when I was a kid, and we'd catch them in the lake at Alondra Park and keep them as pets.

Around here they're known as "crawdads" or, more simply, as "mud bugs".

Best enjoyed as part of a "Cajun Fest" with large groups of friends, Zydeco music, and much beer.

It's a great party.
