We had a thread on this years ago and I've been making it ever since. Today the boy and I are on our own, watching football and dicking around the house. Our mother left for the day to tutor math for a few of the local kids, and she lefty switch no bread for some samiches. So, I started to rummage around the pantry. Flour? Check! (2 3/4 cups) Baking powder? Check! (1tblsp) Baking soda? Check! (1/2 tsp) Sugar? Check! (3 tblsp) Salt? Check! (Pinch or two) Olive oil? Check! (2 tblsp) Beer! Always! (12 oz can of something light. Lagers seem to work best, I had some Rainier on hand.) I also threw in a 1/4 cup of smoked cheddar. Mix it together and the pour into a greased bread pan. No yeast needed and not one need to rise and proof. So, it's really quick. Bake for 45 min @400. Rest for 20 min. If you pull it and cut right away it will be under done. You need to let the carryover happen. The result is a dense yet fluffy bread with a thin crunchy crust. It pretty much perfect. Looks outstanding. I subscribed so I will have the recipe to try. My Mom made fresh bread for most of my first 20 years of living. I can still remember getting off the bus, walking towards the house, and getting a whiff of fresh loaves on the wind. French bread, Italian, Rye, whole wheat, Irish soda bread.........Bread glorious bread....aaaahhhhhhh. By the grace of God, she is still alive and kickin' to this day. And still baking bread. Care packages of date nut bread, and all the rest.........
