Alright guys, this is going to have to be a quickie since I whipped it up after work. Got late enough that I even had to eat inside.
Started with a yellow onion and russet potatoes. Sliced the onion.... 
Sliced the potatoes... 
Layer in a glass dish, sprinkle with sea salt and freshly ground black pepper... 
In the meantime I made up a sauce using butter, salt, paprika, and flour sort of like a roux, added milk and a bay leaf until thickened, and then stirred in sharp chedder until creamy smooth. Poured over the potatoes to make au gratin... 
Baked this at 400 F for 90 minutes. While that was going, I got the wild King salmon ready by drizzling it with olive oil and sprinkling with salt and pepper. Similar treatment for the brussel sprouts. As well, I zested a few limes and mixed up a lime-butter spread using lime juice, garlic, salt, pepper, and sweet cream butter blended until creamy smooth. 
Salmon and sprouts were grilled over some hickory chips. Once the salmon was done the sprouts went on the grill... 
Finished product! Lime-butter hickory grilled wild king salmon, potatoes au gratin, grilled brussel sprouts, and a fresh baguette grilled with olive oil, beer was a Great Lakes Nasferatu Imperial Red Ale. Defense included a Tavor loaded with M855, my CCW Shield with Federal HST, and a Strider SnG CC in CPM154 steel with black G10. 
No place mat, I'm a heathen...

I love seafood, beef has its place but sometimes I like things lighter. Next week I may try a milanese dish with veal and a little seafood on the side...
