I did a whole chicken. It's in the fridge and will go in the smoker tomorrow with the pastrami.

I'd never done one that way, but it looks good.  Everything I think I will try I end up cutting it in half.

Great way to cook a bird. Did a few turkeys that way some years back. Very nice.

I used to brine chicken but I've stopped.

The only part of the chicken that could benefit from brining is the breast, and even then brining totally screws up the skin (makes it really hard to get crispy skin).
