I decided to make some Mexican cornbread, butter beans and sausage tonight. I figured I'd share my Mexican cornbread recipe with you guys.

Recipe:

Place large cast iron skillet in oven and preheat oven and skillet to 400 degrees

Dry ingredients:
1 cup corn meal
1 cup all purpose flour
2 table spoons sugar
4 teaspoons baking powder
1/2 tea spoon salt

Wet ingredients:

1 cup whole milk or butter milk. I use butter milk
1 large egg
1/3 cup sour cream
3/4 can of cream style corn
1 can diced green chilis
1 1/2 cups grated Colby/Cheddar cheese

Put milk in a large glass bowl.
add the egg and whisk until mixed.
add dry ingredients and whisk until mixed.
stir in  chilis, corn, sour cream and cheese.

put 1/4 cup vegetable oil/bacon grease in skillet along with a large lump of real unsalted butter.
spread oil/butter mixture around skillet and watch it sizzle. It gets me excited.
While skillet is still hot but after butter is melted pour in cornbread mix.
It will start to fry around the edges.
Place in oven and cook for approximately 25-30 mimutes.

This is what you end up with.

Thanks for the recipe bro.  I'm from San Antonio, and I love Mexican cornbread.
Gonna try making this one.
Adding some jalapenos sounds like a great idea as well.
And a cold bottle of Modelo Especial....wooooo!  Chingow!

OP, sent this recipe to the Frau and she cooked it up yesterday for St Patty's day. Have to say this is one of the best corn breads that I've ever had. Thanks for posting.

My wife's aunt makes jalapeno cornbread that everyone loves. She fries cracklins in the cast iron skillet and then bakes the cornbread on top of them.

I made "cornbread" last night too.  Krusteaz Honey Cornbread mix enhanced with crumbled bacon, white shoepeg corn, sharp cheddar, and green onion.   It isn't exactly cornbread, but it's so good it'd make a rabbit hug a hound. Ate it with chili made with the Carroll Shelby mix; dumped in half a can of Castleberry's hotdog chili left over from the previous day's chili dog lunch to get it eaten before I had to throw it out.  Blue Bell vanilla topped with Smucker's Raspberry Fruit Spread, chocolate syrup, and Great Value canned whipped cream for dessert.

Amazingly, he loves me anyway.

That is how we cook it minus the cheese. I like to add a more course grind of corn meal to the mix as it gives some bite, but my wife likes it to be smooth.

Purist? Mexicans do actually make their own cornbread.




If you are a Texan then you should know that slapping green chilis into something don't make it Mexican. It sounds like something a Yankee would do.

Sometimes the butter burns that way.
Guess I've been lucky.  Never had that happen yet.  Brown a bit, but not burn.
