No offense to all you Texans, but I do wish you'd stay there. On the other hand I hope you don't mind my importing Carne Guisada to Colorado! I had it several places while i was working in the Austin area, and decided I had to try make some.
This weekend I cubed about 5lbs of beef chuck, lightly dredged it in flour and Slap 'ya Mama, and browned it, in olive oil, in two batches until it had plenty of color. I took the beef out of the pan, added some more oil, and sautéed 3 diced bell peppers, 3 diced jalapeños, and one diced onion until they were nice and soft. I added about 6 cloves of garlic toward the end, then added 2 tablespoons of chili powder, 2 tablespoons of cayenne pepper, and a tablespoon of oregano. Finally I put the meat back in and added one glass of beer, one can of tomatoes, and one can of green chiles. I brought it all up to a simmer, then moved the pot to the wood stove, and let it cook overnight. It was absolutely awesome! Now I'm looking at recipes on the internet, though, and it looks like I've found a new thing to argue about, should I add potatoes to my carne guisada? That does sound like it would be good! |

Potatoes are something you put in soup.
Not chili. Chili does not need a starch. If you're adding starch to it, be it beans, noddles, or potatoes, it means you didn't add enough meat. Probably because of weakness and dementia brought on by meat deficiency in your diet. |

I have ate at a few hole in the wall mexican restaurants that had a few pieces of potato in their carne guisada. Not enough to over compete with the meat, but enough to get a few bites. Likely depends on what region of Mexico the recipe originates from. Not sure if the OP is just trolling with the title or he doesn't actually know that chili and carne guisada are different things...
