What's yours?  Mine is cheap santoku knife I was given as part of a set.  It cuts through everything like butter.  It's my most utilized piece of cutlery next to my paring knife.  Someday, I'll have nice knives...someday.

I've got some EverSharp Henckels and hate them because they're serrated.

I usually use a set of those white plastic handled flexible filet/boning knives from Sam's club for meat, and a 12$ 7" Santoku from Amazon. None hold an edge all that well, but the Spyderco Tri-Angle cleans that up easily. They'll do until I buy some Wusthofs.

I'm not too picky with knives.  I don't have to have the most expensive ones like some people.  My mom preaches Chicago Cutlery.  I used to sell Cutco back in the day for extra cash.  My dad likes Cold Steel.

1.  Full tang
2.  Stay sharp/easily sharpable edge
3.  Comfortable to hold

I have Wustof Classic knives.  They're fine, but I don't LOVE them.  

I have a 9" chef's , a 6" sandwich, and a 3.5" paring knife, plus a large bread knife, and a handful of Victorinox paring knives that I don't mind throwing into the dishwasher.

I have my eye on a japanese hybrid chef's knife.  It's a Hirimoto Gyuto 240mm.  It has a carbon steel edge with stainless cladding on the face of the blade which gives you the benefits of carbon steel but helps eliminate SOME of the drawbacks in terms of oxidation and etching. It also has a western style handle (but with japanese steel quality!) which apparently helps prevent hand fatigue if you're used to using western style contoured handles. I haven't pulled the trigger on it yet because my Spyderco sharpmaker doesn't sharpen to the angle that the knife excels at, and I'm still working my husband for some ducks.  After the bank account makes a recovery, I'll have to drop the $180 on the knife, plus another $100 or so on a couple stones, and I've seen magnetic levels that you can stick to the blade to verify that you're maintaining the correct angle.

Once you've gone Japanese, you'll never go back.

While it is true that many shitty knives lack a full tang, the presence of one is not a guarantee of a good knife.

Japanese blades are the best in the world, and to the Japanese, the handle is merely a stick, by which to hold the blade.

Yes, they are a joy to use.  I actually got on his waiting list long before he had a lottery and even closed it permanently.  I waited for three years though.  I had the Damascus on order for $1400, and he let me add the straight steel for $1500.  Quite the bargain.

Yep, and you don't have to worry about guests fucking up your sweet Japanese knives by deboning a chicken.  My aunt did this with a layered steel knife that I bought for my mum.
