magicly turns chili into not-chili?  I have seen chili made with lots of different ingrediants...just wanted to know which ones have the magic power to change the name of the dish.

Cubed meat turns it into stew IMHO. The meat should only be beef, unless you call it "chicken chilli".  Peppers of any kind are allowed, as well as no more than 2 types of beans.  Onions= OK, corn, mushrooms= maybe OK.  Shrimps or sausage turn it into gumbo.  Serve with cornbread (mild chilli) or cinnamon rolls (hot/spicy type).  No ham, then it's a stew again.  No bread in the pot 'cuz then it's "XYZ dumplings".

Damn I wasn't even thinking about chicken. I grew up gowing to chili cook offs.  I have had it in more styles than I can count, and always found it odd when someone would say that adding beans(or not adding them) would somehow make it not chilli.

But even I have to say...if it has chicken instead of beef..its not chili.

I knew a dude who put 1 can of rootbeer in his chili. Weird, but whatever works for you.
