Sorry about the unloaded weapons, Lesson Learned I was in a rush to get a picture and grabbed the first guns that I could find unfortunately the unloaded ones.
Wife pic will not make it to the interwebz until she approves and I was not trying to hide the BL, Its what I drink and I like them especially the platinum version
Food came out great except for the Corn Souffle. I have tried about five different recipes and they all suck. Next time if I dont find a good recipe I am gonna use my Corn Bread recipe and add creamed corn and maybe a little heavy cream and try that.


Recipes for Food:

BBQ Sauce
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
3 bacon slices
fresh thyme
1/2 onion
2 garlic cloves
2 cups ketchup
1 cup peach or apricot preserves
2 tablespoons Dijon mustard
2 tablespoons brown sugar
1/4 cup molasses
2 tablespoons apple cider vinegar
1 teaspoon ground cumin
1 teaspoon ground paprika
ground pepper to taste

Directions
Wrap the bacon around the middle of the thyme sprigs and tie with kitchen twine so you have a nice bundle. Heat a 2-count of oil in a large saucepan over medium heat. Add the thyme bundle and cook slowly for 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly, without coloring, for 5 minutes. Add all of the rest of the sauce ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors.

Dry Rub:
2 Tbls kosher salt
1 Tbls Paprika
1 Tbls Cinnamon
1 Tbls brown sugar
1/2 Tbls Cumin
1 Tbls chili powder
1 tsp ground mustard
1/4 tsp cayenne
1/4 fresh black pepper
1/2 Tbls granulated garlic

Rub Meat with yellow or brown mustard and then sprinkle rub on generously.
Smoke for 6-7 hours at about 250 degrees. I spray with apple cider every 1/2 hour after about two hours cooking time has elapsed.
I only used the BBQ sauce on the ribs, the brisket was mopped with "The Sauce" recipe here
I have only tried this with cherry wood as I have about 4 cords of it in my garage. I will try something different next time and report back, maybe hickory or apple.

Very dark indeed. The bark was like 1/4 inch thick, but they were very tender.
