We have a bunch of concrete that is uneven but intact.  Budget is tight; is slab jacking worth doing or should we just have them torn out and poured?

Hire a contractor with demonstrated experience.
Do no ttake their word for it.
Slab jacking or mud jacking can be hit or miss.

If you have solid surfaces for the pumped grout to form against, the jacking process can work very well.
If you do not and monitor holes were not installed, the jacking process can be not so good.

How big is the slab?
demo, haul off, re-pour - $3 - $5 a square foot by a contractor  (4" thick exterior slab on grade)
rent some equipment and do it yourself - save a little money

can also look into leveling grout - again find a contractor with demonstrated experience

yep.... concrete is cheap
