Use good white fish and good corn tortillas. Heat up your tortillas on a skillet and double them up when you make the taco. I love grilled and fried fish tacos. |

Fish tacos are wonderful. In fact, anything Mexican and fish is pretty damn good. The seafood fajitas at my local Mexican restaurant are fantastic.
The sauce seems to be the key to good fish tacos. I haven't figured it out. I'd love to see some recipes. In other words, this is a tag. |

| This reminds me of what a friend of mine said when we went fishing on a pier at Rockport Texas and we walked past a young mexican boy who had caught a small fish.: "Mommy , Mommy I caught a little fish can I take it home and put it in a taco. ?" Probably just my warped sense of humor but dam it was funny. For some reason I think anything with small bones has no place inside a taco. |

If I gave out my wife's family sauce recipe, her and/or her 6 sisters will come after me with machetes. My local mexican restaraunt makes incredible authentic mexican tacos. They serve them with two sauces, one is red and one is a light-green. They call the green one jalapeno sauce. The only way I can describe it is to say it's like pureed jalapenos mixed with a dairy product. Does this sound right? I could eat the stuff with a spoon if it wasn't so hot.

One of the best fish tacos that I've ever had was around 1/3 the way down the Baja Peninsula. We saw the local fisherman just come in with 16 fresh halibut. They cleaned them and turned them into fish tacos for lunch and dinner that day. These tacos just melted in your mouth. Fish tacos are pretty simple to make; Buy some fresh white fish fillets and cut into 1" strips = halibut, ocean bass, rock cod etc. Dip them in some batter and heat up a pan of hot vegatable oil for deep frying Drop them in for a minute +, then put them on some paper towels to soak up the extra oil Place the fish on a couple corn tortillas, add some salsa and maybe some shredded cabbage and eat. |

Bobby Flay recipe.
Ingredients Tacos: 1 pound white flaky fish, such as mahi mahi or orata 1/4 cup canola oil 1 lime, juiced 1 tablespoons ancho chili powder 1 jalapeno, coarsely chopped 1/4 cup chopped fresh cilantro leaves 8 flour tortillas Garnish: Shredded white cabbage Hot sauce Crema or sour cream Thinly sliced red onion Thinly sliced green onion Chopped cilantro leaves Pureed Tomato Salsa, recipe follows Directions Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes. Remove the fish from the marinade place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork. Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes. Pureed Tomato Salsa: 2 tablespoon peanut oil 1 small red onion, coarsely chopped 4 cloves garlic, coarsely chopped 4 large ripe tomatoes, chopped 1 serrano chile 1 jalapeno, sliced 1 tablespoon chipotle hot sauce 1 tablespoon Mexican oregano 1/4 cup chopped fresh cilantro leaves Salt and pepper Preheat grill or use side burners of the grill. Heat oil in medium saucepan, add onions and garlic and cook until soft. Add tomatoes, serrano and jalapeno and cook until tomatoes are soft, about 15 to 20 minutes. Puree the mixture with a hand-held immersion blender until smooth and cook for an additional 10 to 15 minutes. Add the hot sauce, oregano, cilantro and lime juice and season with salt and pepper, to taste. Yield: 6 to 8 servings |

You can catch Halibut that far south? I've fished off San Fran and the water was plenty cold for it but Baja is a good ways down. I had some real good lobster and shrimp in Ensenada. Didn't catch much but small black bass in the Sea of Cortez, up by San Felipe. I really want to get to Baja and go for big Tuna. I prefer cod in my fish tacos. Mahi is great but expensive for a cheap dish. |

We do 'em the easy way-
GRILL a nice tuna steak (get it good and smoky!). Dice it up- you want nice sized chunks. Fill pre-made taco shells with the fish - squeeze fresh lime, and top with shredded cheese, then crack some fresh black pepper and a bit of granulated garlic (both to your taste). Broil until cheese is bubbly, then top the tacos with chopped onion, diced tomato and shredded lettuce. Serve with your favorite salsa, more limes or lemmons, and sour cream. Side of re-fried beans, favorite beer, and you're set! |

Last summer I had a yellow-fin tuna burrito at Mahi Mah's in Virginia Beach. Pure heaven Excuse me thanks for the attack on me but again fish+taco is shit. I like the fish tacos at the local burrito joint and have tried to replicate the sauce multiple times. After trying various food network and online recipes and searching for pre-made stuff for a year or so, we saw this in the mayo aisle and it was dead on.
