It doesn't matter how many times I see or eat purple potatoes or yams. I still think its strange and wonderful.


















Before you say BS or claim these had food color added. Potatoes come in all kinds of crazy colors, which usually results in different flavors. These just so happen to be purple.

I've never tried it or seen it done. I wouldn't be surprised if it changed as the color that anthocyanin takes is based on the Ph level. You know blood oranges? Those horrible vile little fruits are full of acid and as a result the anthocyanin in them makes em red.(If I'm wrong someone correct me )

The best tasting potatoes and yams/sweet potatoes I've ever had were purple. A normal Purple potato can have a kind of nutty almost russet thing going on. While a Purple yam/sweet potato can have this sort of sweet smooth flavor going on and believe it or not make tasty jams, cakes, ice creams, and fillings for sweet rolls.

They do look cool. I put em in with red and white potatoes and make red white and blue potato salad. Get some steaks and beer and you got a 4th of July party

We have a very large section of our garden dedicated to potatoes. Red, Purple, white, gold. All do very well with little effort.

It's a different species from the standard Russet. My understanding is the purple comes from the type of anti-oxidants in the potato.

Same here, but Yukon Golds don't do very well, dammit.  I love golden fries with the dipping sauce a buddy of mine brings back from Salt Lake City.

The China Market down here sells all kinds of purple tubers. All are tasty and my poop has always come out normal.

Most people do not know that there are over 5,000 varieties of potatoes, and they originated in iirc Peru.  There is a drive to get more varieties into the market, to increase ginetic diversity and avoid one disease wiping out all of the world's potato plants.

Oh, and kick ass pics...worthy of saving them!

I'm always blown away by all the different varieties of vegetables and fruits out there.

 



Maybe its just the freaky factor, but I'm always fascinated and drawn to purple and blue fruits and veggies.
