So, we have over 10 inches, drifts are about 3-4 foot and 6 more to come with more wind. Im sick of winter.

I have on the menu Pheasant.

Plan to render down 6 nice slices of bacon, then brown the breasts in bacon grease and a little olive oil.

After that Ill toss in 3 sliced onions and slowly cook them down till clear and add 4 cloves of garlic and some red pepper flakes, oregano, and basil.

Then Ill brown whole button mushrooms and carrots in the pan.

Ill deglaze the pan with chicken stock and reduce it by 1/2

Ill layer potatoes, pheasant, the reduction, onions and carrots in dutch oven and bake at 400 for 1 hour.

When cooked through and spuds are done Ill make sourdough biscuits and lay on top and bake till perfect.

Gonna serve it up with some wild rice and a good Tuscan red.

Then the wife and I will watch the last half of Lonesome Dove.

I'm doing burgers. Debating if I want to get hardcore and do 'em on the grill. Otherwise the cast iron is gonna come out.
