Wife wants Chili-Burgers.





I have the burger thing covered.... however I do NOT want to use canned Chili..... never made it from scratch, so need some good recipes.  I've found a few recipes on the web for em.... however I'm looking for some good first-hand accounts of what rocks.





Requirements:


-Must use cow, no bird in this meal


-no beans (sorry bean lovers)


-not melt-face off type spicy.... some bite is one thing..... making me remember the day I was OC sprayed is another.

Step 1: Add beans....go from there. Other wise it's a Sloppy Joe sammich.

Add plenty of ground beef and tons of beans.

Adjust the chile peppers for the amount of heat you like.




VacaDuck’s
Powder Keg Chili












4
pounds of London Broil, diced into 3/8" cubes














6
medium white onions, diced up nice and fine














2 bulb
of garlic, similarly diced














50
dried Arbol chiles, turned to powder in the food
processor














10
dried New
 Mexico chiles, diced up nice and fine














8 large
Jalapeños, diced














8
Habaneros, diced














Cumin,
and chili powder - no real measurement, just what
looks and tastes right.














2
Tablespoons smoked paprika














2 Large
bell peppers, diced up like the Jalapeños














2 large
can of stewed tomatoes,














1 large
can of Beef Broth














¼ cup
of molasses














2
bottles of your preferred beer (1 for the chili, 1 for the
cook)



















Optional
– substitute 1 pound of chorizo for 1 pound of
beef.



















Sweat
all the veggies in a large pot.














Brown
the beef with a touch of salt and pepper.







Add all ingredients to the pot with the
veggies and
let simmer for 3 hours

Pick up a pack of McCormick spices Chili mix. Follow directions on the back, do not add beans.





Or make some Texas Weiner Sauce. It's a Northeast thing...

Weiner Sauce
1 large onion, chopped



1 tablespoon vegetable oil



1 pound ground beef



3 (6 ounce) cans tomato paste



3 (6 ounce) cans water



3 tablespoons chili powder



3 to 4 drops hot pepper sauce



1 teaspoon salt



1/2 teaspoon pepper



1 tablespoon oregano






Cook onion in oil, add beef and cook until lightly browned and crumbly.
Stir in tomato paste, water, and seasonings, and mix well.  Simmer for 3
hours, stirring and adding water as necessary.  Serve over weiners with
chopped raw onion and mustard.

Here's my home made chili recipe. Just omit the beans at the end. I do it both ways all the time.

Sometimes I get crazy and add other things that don't belong. Onions, bell peppers, tomatoes, stuff like that.

If your not going to make it to eat besides just some burgers, it's waste of time in my opinion. There's good canned chili out. Good enough for burgers anyways.

I've always wanted a good arfcom recipe after watching the threads with y'all shooting it out.

But then again, I like my chili ruined (aka easy on the beans, but lots of bell pepper, tomato, onion and celery bits).

Leftovers can be eaten separately... don't plan on using 100% of the Chili on the burgers.

There are easily as many recipes for Chili as there are days in the year....one constant in all is the addition of beans.
