I took my wife to a Alpine slide type thing. Its was at a ski slope. You sit on a sled and ride down the mountain in a track that is more like a trough. This was summer of course had a ball. Ahhh the good ol' days

Skydiving.  See if somewhere around you does tandem jumping.  Kinda pricey, but worth it.

If that's not possible, try a balloon ride.  Not as expensive and she will love it.
