| so i transferred my trippel into a secondary tonight. I'm doing 5 gallons. Got to the bottom and cut off the siphon to avoid the shit on the bottom. got about 4.5-4.75 gallons into secondary. A little later i started to think if I should have allowed some of that shit at the bottom into this since it is such a high sugar brew. Secondary fermentation is going to take a long ass time (6-12 months) so it may not have been a big deal to get some of that in there. When I tipped the bucket to get a little more into secondary and the wort clouded from the shit on the bottom, i cut it off. Was I wrong to not allow some of that in there? Opinions? |

As long as the primary fermentation was complete, you did right.
You are aging long-term and wanted to get it off the yeast cake to prevent off-flavors from possible autolysis. So why would you worry about not having that possibility in your secondary? The only issue you might have to worry about is if you are going to bottle condition in 12 months. You might need to add some yeast along with the bottling sugar at that time. |

Agree...yeasty deads are bad...
My solution? Brew 6 gallons water at start, + ingredients. I place the wort in to a 6 gallon carboy/better bottle and pitch. With evaporation I yeild about 5.25 to 5.5 gallons of inital beer...when I rack to secondary I get about 5+ gallons and as such...into the keg with 5 gallons of beer.... |
