| Once and a while I get on a fritos and bean dip binge...what can of refried beans at about a buck a can I make a decent chip dip out of....if it's to complex I will just buy the rack stuff....just need tips for being a cheap old fuck....thanks |

I bought this white bean / truffle dip at Wegman's years ago...it was amazing, and I've been looking for it ever since. They told me it was a seasonal item, though, and they never know when or if they'll get it back. So I've tried a few times to recreate it, but I've never really been successful, I can't get the texture right.
Someone above brought up cream cheese...and now I can't wait to get home and try using that to smooth things out. Can of cannellini, some cream cheese, truffle oil, a bit of fresh garlic, process until smooth... I'll report back, I'm looking forward to trying this! |

In a glass cooking pan ( easier to clean when done ):
From bottom to top: 1. Spread refried beans around , about 1/4 inch 2. Spread sour cream on top of beans. 3, 1/2 jar of your favorite salsa on top of sour cream. 4. 1/2 bag of taco mix cheese 5. Add jalapeno slices on top 6. Chill in refrigerator for about an hour 7. Eat! |
